Another member of the mint family, thyme is a strong immune boosting herb that is also a hearty perennial and great ground cover for the garden or a container. Thyme is also native to the mediterranean so it enjoys a mild winter but it's possible to overwinter with a thick layer of mulch. There are many varieties of thyme, but most have a tendancy to spread so plan for a large space or be prepared to trim it back. There are some especially hardy varieties of thyme that can be used for walking paths.
Thyme has had many uses outside of the kitchen for centuries. The ancient Egyptians used thyme in embalming. Romans and Greeks used thyme in purificationi ceremonies and the Greeks associated the plant with strength and courage. As a culinary and medicinal herb, thyme is a powerful anti-microbial and antibiotic, making it a key ally for cold and flu protection or treatment. Thyme tea is an excellent way to get the benefits of this herb in addition to stripping the leaves and adding it to any kind of dish - from eggs and chicken to rice, pasta or potatoes. I've also made a delicious thyme-infused honey syrup that makes a great medicinal addition to any cup of tea.
